Turkish Tabouli (Kısır)

 

Makes 5-6 servings

Start at least 3  1/2 hours before serving – it needs to cool

 

Ingredients:

 

*   1 Cup dry bulghar wheat (small cracked)

*   Tomato Paste (1/3-1/2 can per recipe)

*   1/2-3/4 tsp. salt

*   1/4 cup fresh lemon or lemon juice

*   1/2 cup chopped scallions

*   Optional heaping tsp crushed, fresh garlic

*   3/4-1 tsp dried mint

*   1/4 cup good olive oil

*   1-2 medium tomatoes, diced

*   1 packed cup freshly chopped parsley

*   fresh black pepper

 

Directions

 

1.  Combine bulghar, boiling water and salt in bowl. Cover and let stand 15-20 minutes or until bulghar is chewable

2.  Add lemon juice, garlic, oil, mint and rest of ingredients and mix gently

3.  Cover & place in refrigerator for 3 hours
